A friend of mine came across a recipe for butterbeer a while back somewhere online. My deepest apologies that I do not know the original source, and if anyone does know, feel free to let me know so I can credit it properly. We made one slight modification to the recipe (adding Ginger Ale, which seems to make it a bit fizzier than Cream Soda alone does). Anyway, I've made it for a couple of different parties, and I think it works very well. It tastes really good, and is pretty much how I imagined butterbeer would taste. Here it is, if anyone else wants to try it:
Butterbeer
1 cup Butterscotch Schnapps 1 cup Ginger Ale 6 cups Cream Soda
Mix ingredients together right before serving. Makes 2 quarts.
My friend said the place where she found the recipe also had a "virgin" version: simply replace the Schnapps with heated Butterscotch syrup. I have not tried that version, however, so I can't vouch for it. And keep in mind that it is butterbeer, so even the regular version is only strong if you're a House Elf.

ETA: I checked for a butterbeer recipe when the PotterParties site first went up to see if they had this one already, and I didn't see it, which is why I resolved to post this as soon as the forums went up again. But now I see that it is there, and credited to what I'm pretty sure is the same source my friend found. I will leave this post as is, however, because it has the suggestion of adding Ginger Ale which, as I said, we found makes the recipe turn our a bit fizzier. Also, the recipe that is posted on the main site doesn't give instructions for a virgin version. That may be because it's from the same source that suggested Butterscotch syrup earlier, and they have since found that this doesn't work. *shrugs* I'm not sure, but I figured people might still want to try it for themselves. So. That info will remain here as well, if anyone wants to try it.

Well, this isn't exactly a recipe, but it is a food suggestion. Make a castle cake with this bundt pan from Williams-Sonona. Add upside down ice cream cones to the turrets, or extra ones for spires.

Haha...all this talk of butterbeer is making me thirsty! :chug:
The 7 cups cream soda to 1 cup butterscotch schnapps is my recipe from my 2002 party that has been on my website since 2003. I haven't heard of any other recipes with that exact recipe, and we do have at least 3 versions of butterbeer on PotterParties so far, including mine. I like that we have a lot of variety of butterbeers for people to try!
I have to make my butterbeer for Halloween now too, since if I don't, people complain! It is very sweet I agree, but since the fizz goes away pretty quickly, I only make it immediately before guests arrive & then refill during the party, so less to mix together works for me. I like your ideas of modifying with ginger ale, though. I might have to try that!
I did originally try looking for butterscotch flavoring vs. schnapps, but I didn't find any unless it was REALLY expensive, so since my HP parties have been mostly adults anyway, we just didn't let kids have any butterbeer...and really it is NOT that strong. You have to mix up your own potion with Aqua Fortis (vodka) to get any real alcohol buzz at my HP parties... :wink: I did read in some of the Potter Parties feedback I think that someone found butterscotch italian soda flavoring syrup, so I might look for some of that, since I think I'll probably have more kids at this July's party.

No clue what treacle is, but I remember seeing one in the PP recipe database. So go take a peak there, you might have to wade through to find it (some of us had a bit too much fun coming up with HP related names for our recipies ).
