This might be obvious but i've always wondered...
I'm sure there are other people Voldemort has tried to kill lots of people who have been protected by there parents standing in front of them, sacraficing themselves like Lily did for Harry.
but then why was Harry the only one that had a protective spell put on him by his mother?

I know JKR has said Lily was the only one to have been offered the opportunity to step aside and this was what makes her unique. But, we could be contraversial & ask the question : how likely is that? In all of wizarding history, has no one ever stood in front of their child / parent / sibling / friend / true love to protect him, and the would-be killer says *get out of the way* kind of thing. Like, it's a natural response for a person to protect their loved one, and in response to that it's natural for the killer to say *get outta my way* even if the killer didnt truly mean it.
Like if Lily had stepped aside (yeah I know, I can already hear JKR screaming *how dare you!* lol) would LV really have let her live? She's a witness ...

It isn't so much that no-one would make that sort of sacrifice, rather that no-one else was given the opportunity. Lily's sacrifice was only relevant because Voldemort would have let her live (in fact we now know that Voldemort earlier tried to recruit the Potters), and it is only because Voldemort lost patience with her that she died. In most cases the mother would have fought back, or the sort of person who would murder a child in cold blood would kill the mother as soon as she got in the way.

Incidentally, I don't think Voldemort would care about Lily being a witness, in fact he might even want Dumbledore to find out to complete his triumph, and to strike fear into others who might be thinking of opposing him.
