by JaneMarple9 Ingredients 6 oz (175 ml) of red wine 1 large orange, finely pared rind only 2 lemons, finely pared rind and strained juice 1 inch (2.54 cm) cinnamon stick 6 whole cloves 8 cardamom pods 2 tablespoons of brandy 2 oz (50 g) caster sugar 1 cup (300 ml) double cream, chilled Dessert biscuits Instructions Pour the red wine into a stainless steel saucepan. Add orange rind, lemon rind and juice, cinnamon stick, cloves, cardamom pods, brandy and caster sugar. Bring just up to a boil, then remove from heat, cover and let stand overnight (or at least 2 hours). A few hours before serving, strain the wine through a nylon seive into a large bowl. Discard the orange and lemon rinds and spices. Pour the double cream into a bowl with the prepared wine and whisk until the mixture holds a soft peak. Spoon into serving glasses. Cover glasses with plastic wrap and chill until serving. Serve with dessert biscuits Credit JaneMarple9's recipe was taken with permission.
