How Did Professor Binns Die?

Okay, seeing as how this happened before Harrys, "Triumph over the Dark Lord," I think it fittingly belongs in "History Of Magic." Anyway, any ideas as Binns died, was it just old age, or was it a curse or some other bit of magic? And finally, in Book One, Nearly Headless Nick says, " I havent eaten in almost 4OO years, ( or something like that) meaning that ghosts cant really touch or really interact with anything physical. That being said how can Binns teach, ( grade papers, administer exams?) Any ideas
