My two favorites would have to be Ron/Hermione and Remus/Tonks. Remus/Tonks might be from less of a canon perspective and more how I put things together-I love Remus, and the whole forbidden love thing always does me in. And gosh, it was sad.
But Ron and Hermione are the most developed and believable couple. I never understood the Harry/Hermione shippers, it always seemed clear to me that it was Ron and Hermione from the beginning. After GoF, I couldn't see how people were thinking it would end up any other way. I always thought they had a really interesting, rocky friendship: They were friends and obviously cared deeply about each other, but Ron was terribly immature and unreasonable at times. I think Hermione always knew how it was going to end up, she had an inkling, and was just waiting for things to fall into place and for Ron to grow up a bit, as she knew it and he would. The way I see it, they became friends in the beginning with little crushes on each other (which, at 11, they probably didn't know what to do with.) For years they were best friends with the tension there, fights and Ron's immaturity resulting...but really, they didn't have to say anything, they just knew, and it slowly developed from best friends and teenage emotional quarrels to a real, adult relationship. LOVES IT
